Boiler pressure dropping on a La Cimbali M39 almost always comes down to one of three things: a failing pressure stat, a degraded heating element, or a slow leak somewhere in the boiler circuit. Here’s what I look at first, and what you can safely check yourself before calling a tech.

Why the Gauge Drops: The Likely Causes

Pressure stat failure is the most common culprit on the M39. The pressure stat (also called the pressurestat) reads the steam pressure inside the boiler and cycles the element on and off to hold it at the set point. When the stat starts to fail, it either reads late or not at all. The element stops kicking in when it should, pressure bleeds down during a busy pull, and the gauge drifts below the green zone. Sometimes it holds fine when things are quiet, then drops the moment you start steaming milk at volume.

Element degradation or partial failure is the second thing I check. The M39 is a heat exchanger machine, meaning one main steam boiler handles both steam and, through an internal heat exchanger, brew water heating. When the boiler element starts losing efficiency before it fails outright, you might see pressure recover slowly between drinks rather than holding steady. A full failure is obvious; a partial one isn’t. Resistance testing with a multimeter tells the story.

Slow leaks are less common but worth ruling out early. Internal scale buildup can stress fittings and the boiler body over time. A weeping fitting at the pressure stat port or a group supply line will cause steady, gradual pressure loss that looks a lot like a stat problem until you run your hands around the circuit. If there’s moisture on any fitting or around the boiler casing, that’s your lead.

Safety valve weeping is a variation of the leak scenario. The M39’s overpressure safety valve can develop a small, intermittent leak if the spring fatigues or if mineral scale holds the seat open slightly. You’ll sometimes see steam or drips from the valve discharge tube under normal operating pressure. If that’s happening, it’s not just a pressure loss issue, it’s a safety concern.

Scale buildup on the element reduces heat transfer efficiency and can mimic element failure. Bay Area water is moderately hard depending on the municipality, and without regular descaling cycles, the element surface develops calcium deposits that make it work harder for the same output. What a Tech Checks First

  1. Verify the set point. Confirm the pressure stat is actually set to spec. Sometimes it gets bumped during a previous service. Takes two minutes.

  2. Watch the element cycle. With the boiler at temp and a clamp meter on the element circuit, I watch whether the element is drawing current and how it cycles relative to the gauge. A stat that’s cutting out too early shows up immediately.

  3. Test the pressure stat. Pull the stat, check continuity and the actual cut-in/cut-out points, and compare against spec. The M39 pressurestat is a known wear item on high-volume machines. If the machine is several years into heavy service, I usually just replace it while I’m in there.

  4. Test element resistance. Disconnect the element leads and measure resistance across each leg and to ground. Out-of-spec readings confirm a failing element. Continuity to ground means replacement.

  5. Inspect fittings and the safety valve. Physical inspection with the machine at operating pressure, looking for moisture, scale deposits around fittings, or any discharge from the safety valve tube.

  6. Check the water level probe. A malfunctioning level probe can cause the autofill to behave erratically, which indirectly affects boiler pressure. Worth a look if everything else checks out.

What You Can Safely Do Yourself

A few things are safe to check before pickup:

  • Read the gauge carefully. Note where it drops and when. Does it happen only under load (steaming multiple drinks back to back), or does it drift down even sitting idle? That distinction narrows the cause significantly.
  • Check the safety valve discharge tube. If there’s visible dripping or the tube is wet, flag that for bench diagnosis.
  • Review your descaling log. If the machine hasn’t been descaled in over a year on Bay Area water, mention it when you request pickup. It shapes the diagnosis.
  • Look for visible moisture around the boiler and fittings. No need to remove panels; just look at what’s accessible.

What to leave alone: the pressure stat adjustment, the element connections, and anything involving the boiler drain. The M39 stores significant thermal energy and pressure, and working on those components without proper lockout procedure is how people get hurt.

When to Call a Pro

Consistent, worsening pressure loss won’t self-correct. A pressure stat swap is a quick repair. An element job takes longer (boiler drain, element out, reseal) but the M39 is well-supported and parts are readily available.

Moisture anywhere on the boiler circuit, or a weeping safety valve, is urgent. A dripping fitting is failing, not just leaking a little. Don’t run the machine through another shift hoping it stabilizes.
