Bay Area tap water varies a lot depending on where you are. San Francisco’s Hetch Hetchy supply is exceptionally soft, typically under 50 ppm hardness and around 55 ppm TDS. East Bay Municipal Utility District water is harder in some service areas, potentially reaching 80-120 ppm depending on the treatment plant and season. Parts of the South Bay drawing on Santa Clara Valley groundwater blends can run harder than either. The point is that the range across the Bay Area is wide enough that two cafes running the same machine and the same espresso program can be on entirely different service schedules.

For espresso machines, the SCA target for brew water is 75-250 ppm TDS with a hardness (calcium and magnesium carbonate) of roughly 50-175 ppm as CaCO3. Many Bay Area municipal supplies fall within that window, some near the softer end and some closer to the upper range. Either way, once you know where your water actually lands, you can make a real filtration and maintenance decision rather than guessing.

What “water hardness” actually means for your machine

TDS (total dissolved solids) and hardness are related but not the same number. TDS captures everything dissolved in the water: minerals, salts, chloramines. Hardness specifically tracks calcium and magnesium ions, the ones that precipitate out as limescale when water heats up inside a boiler. The higher the hardness, the faster scale accumulates on heating elements, boiler walls, and group head components.

The relationship between hardness and scale rate is roughly proportional. Running significantly harder water means more frequent service intervals, and that math matters when you’re planning a maintenance schedule.

Where Bay Area water actually lands

San Francisco’s Hetch Hetchy supply is one of the softer municipal sources in the state, typically around 20-50 ppm hardness. East Bay Municipal Utility District is harder in many of its service areas, with hardness that can reach 80-120 ppm depending on season and source blend. Some South Bay cities drawing from Santa Clara Valley groundwater blends can run higher still.

The practical upshot: a cafe in the Mission and a cafe in Fremont can be running the same machine on the same espresso program and seeing dramatically different descaling intervals. If you moved your equipment or opened a second location, the service schedule from your old spot doesn’t automatically transfer.

The only way to know your actual water is to test it. A basic TDS meter costs under $20 and gives you the broad picture in seconds. For hardness specifically, test strips or a drop-count titration kit give you the number you need for filtration decisions. Your water filter supplier should be running this test when they do a filter change anyway.

What scale does inside the machine

Limescale is an insulator. On a heating element, even a thin coat forces the element to run hotter to reach the same brew temperature, shortening its life. Inside a boiler, scale buildup reduces volume, which changes the machine’s pressure and temperature behavior. Scale on solenoid valves and flow meters causes sticking, erratic flow rates, and eventually failure.

On a commercial La Marzocco, Synesso, or Victoria Arduino, the boilers are accessible and descalable, but it’s not a quick job. On single-boiler prosumer machines used in smaller cafes, scale in the thermocoil or thermoblock can be hard to treat without partial disassembly.

The symptom that usually brings people in: the machine is pulling short, pressure is dropping, or temperatures are inconsistent shot to shot despite the same dose and grind. Scaled machines also frequently trip thermal cutoffs under load during a rush, which looks like an electrical problem until you open the boiler.

Filtration options and what each one does

A basic scale inhibitor cartridge (the kind that comes standard with most commercial equipment, often a BWT or Everpure equivalent) works by treating the minerals in the water so they’re less likely to deposit on surfaces. Different cartridges use different chemistry, but the general goal is the same: keep calcium and magnesium in solution rather than letting them plate out on your boiler. These work, but they have a rated capacity in gallons. Running one past its service life is not a neutral act, it can actually make scaling worse as the media exhausts.

Reverse osmosis removes nearly everything, which sounds ideal until your barista notices the espresso tastes flat. Water with almost no minerals extracts differently and can be corrosive to copper and brass components over time. If you go RO, you need to remineralize to a target range. This is doable and some high-volume cafes do exactly that, but it adds complexity and a point of failure.

A properly sized and regularly serviced scale inhibitor is the right call for most Bay Area cafes. The key word is “properly sized.” A single-group machine with one cartridge rated for 1,000 gallons needs a different conversation than a three-group bar doing 200 drinks a day.

When I get a call about a machine running hot or pulling inconsistent shots, one of the first things I check is descale history and water source. A boiler inspection tells the story pretty fast. If there’s significant scale, the service usually involves a chemical descale with a food-safe acid solution circulated through the boiler and heat exchanger, then a thorough flush. On badly neglected machines, heating elements need replacement rather than cleaning.

I also check the filtration setup. A lot of the scale damage I see comes not from hard water alone but from expired or undersized filters that gave out silently months ago.

When to call a pro

If your machine is showing inconsistent temperatures, pulling short under pressure, or making sounds it didn’t make before, scale is a reasonable first suspect. A basic TDS check you can do yourself today. Anything inside the boiler, or any chemical descale on a commercial machine, should be done by a technician who knows the equipment. The wrong acid concentration or contact time can damage seals and gaskets, and you won’t see the damage until weeks later.

Cafes in the Bay Area should have a water test and filter service on a written schedule, not on a “when it seems slow” basis. The machines that hold up longest are the ones on a maintenance program, not the ones that get emergency calls twice a year.
