What Backflushing Actually Does
Backflushing forces water (or detergent solution) backward through the group head, against the direction of normal flow. The blind filter blocks the exit, so pressure builds and pushes back through the shower screen and the solenoid valve. That loosens and flushes out coffee oils, fine grounds, and oxidized residue that accumulate every single shot.
If you skip it long enough, you’ll notice it: bitter or rancid shots, slow solenoid response, or a group head that hisses and dribbles instead of cutting off clean.
How Often to Backflush
For a commercial machine pulling 50-plus shots a day, a plain water backflush (blind filter, no detergent) should happen at the end of every shift. A detergent backflush, using an espresso-machine-specific cleaner like Cafiza or Puly Caff, goes once a day at closing, or at minimum every three to five days depending on volume.
Light-use machines, say a small office setup pulling 10-15 shots, can get by with a detergent backflush every two to three days and a water-only rinse more frequently.
The short version: if you’re running a cafe, detergent daily. No exceptions.
Blind Filter vs. Detergent: When to Use Each
A blind filter (also called a blank basket or backflush disc) is the tool. It fits in your portafilter handle just like a regular basket, but it has no holes. You need it for both types of backflushing.
Water-only backflush: Insert the blind filter, lock in the portafilter, run the pump for about 10 seconds, stop for 10, repeat 5 cycles. This knocks loose grounds and light oils back through the solenoid and out the drain. Do this after every heavy session.
Detergent backflush: Same cycle, but you add cleaner powder to the blind basket before locking it in. Follow the dose on the package (Cafiza is typically around 3 grams, Puly Caff similar). The detergent emulsifies oils that water alone won’t touch. After your detergent cycles, always finish with several water-only cycles to flush any cleaner residue out completely. Residue left in the group head will ruin the next shot and can irritate people sensitive to cleaning chemicals.
A few things to know about the cleaner itself: use only products specifically formulated for espresso machines. Dish soap and general kitchen degreasers can damage gaskets and seals, and they leave a flavor that takes many shots to clear.
One important caveat: E61 group heads do not have a 3-way solenoid valve. The backflush process described above applies to machines with a solenoid (most modern commercial units). E61 groups vent through a different mechanism and cannot be backflushed in the same way. If you’re not sure which type of group head your machine has, check with your tech before attempting a blind filter backflush.
What You’re Actually Cleaning
The group head sits at the end of a system that includes the boiler, the thermosyphon or heat exchanger circuit, and a series of seals and o-rings. When water flows through grounds at roughly 9 bar (the traditional standard, though some modern machines use variable pressure profiles), it extracts oils from the coffee. Not all of those oils make it into the cup. Some coat the shower screen, the dispersion plate behind it, and the walls of the group head.
Over time, those oils oxidize. That’s what makes neglected espresso taste sharp and rancid rather than just bitter.
The solenoid valve is the other main beneficiary of regular backflushing. It’s what vents pressure from the group when you release the pump. If it gunks up, you get groups that drip after extraction, or a solenoid that sticks open or closed. On most commercial machines, the solenoid is a wear part. But keeping it clean extends the interval before it needs rebuilding.
The backflush does not descale the boiler or the heat exchanger. That’s a separate process, and on most commercial machines it should be done by a tech who can also inspect the element, the safety valve, and the scale buildup inside.
What’s Safe to Do Yourself
Backflushing is well within the range of cafe staff with five minutes of training. So is group head screen removal and cleaning, typically a slotted or Phillips screw on most machines, pull the screen, soak it in hot water with cleaner, scrub with a group head brush, rinse, reinstall.
Portafilter baskets and handles get a soak in the same cleaner solution. The steam wand purges before and after every use, and a periodic soak of the tip.
What’s not DIY territory: anything involving the boiler, the pump, the solenoid rebuild, the group head gasket replacement, or the water circuit. These require the right tools, an understanding of the specific machine’s pressure settings, and usually a way to safely discharge steam pressure before opening anything up. Getting it wrong can mean a leaking machine, a damaged seal, or, at worst, a burn.
Signs Backflushing Isn’t Enough
If you’ve kept up with daily detergent backflushes and still have issues, a few things could be going on:
The group head gasket is worn. It’s a rubber seal that locks the portafilter into the group head. When it hardens or cracks, you get leaks around the handle during extraction. A tech can inspect and replace it during a routine service call.
The shower screen is partially blocked. Fine grounds can pack into the holes over time. If your backflush isn’t clearing it, remove and replace the screen, or soak it overnight.
The solenoid valve needs rebuilding or replacing. If you’re backflushing consistently but still getting a group that drips or hisses between shots, have it looked at.
When to Call a Tech
If your machine has been running hard and hasn’t had a proper service in the past 3-6 months (or up to 12 months for lighter-use setups), a backflush alone won’t catch everything. A full commercial espresso machine service typically includes group head gasket inspection, solenoid inspection, boiler pressure check, descale if needed, and an overall calibration. It’s the difference between preventing a problem and reacting to one.
Diagnostics can take up to a week; most repairs run 3–4 weeks. That is exactly why we recommend preventive maintenance: a maintained machine does not sit in a repair queue for a month.
Backflushing daily is the single highest-leverage maintenance task you can do. Keep up with it, and most group head problems either don’t happen or get caught early enough to fix without downtime.
